Grandma’s Chicken and Rice

Grandma’s chicken and rice is one of my favorite baked meals I enjoyed as a kid. This meal screams Southern comfort. You will fall in love!
Baked Chicken Drumsticks

Ingredients  

  • 4 Chicken Drumsticks
  • 1 1/2 Cup White rice uncooked
  • 32 Oz Chicken Broth
  • 4 Tablespoon Butter
  • 1 Tablespoon Olive oil
  • 1 Teaspoon Salt to your liking
  • 1 Tablespoon Adobo Seasoning or Poultry Seasoning ( to your liking)
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Paprika
  • Red Bell Pepper Chopped
  • Green Bell Pepper Chopped
  • Onion Chopped

Instructions

  • Preheat your oven to 350 degrees
  • To a bowl add in all of your seasonings and mix together well.
    1 Teaspoon Salt, 1 Tablespoon Adobo Seasoning, 1 Tablespoon Garlic Powder, 1 Teaspoon Paprika
  • Next, add olive oil to the chicken along with seasonings. Mix Well.
    1 Tablespoon Olive oil, 4 Chicken Drumsticks
  • Next, heat your butter in a pan on medium-high until melted.
    4 Tablespoon Butter
  • Add your seasoned chicken to the pan and allow to sear on both sides of the chicken for 5 minutes.
  • Remove the chicken from the pan and sit to the side
  • Add in your chopped onions and bell peppers(sauté until slightly browned)
    Red Bell Pepper, Onion, Green Bell Pepper
  • Next, Add in your white rice.
    1 1/2 Cup White rice
  • Next, stir the rice for 3 to 4 minutes and stir in your chicken broth.
    32 Oz Chicken Broth
  • Add your chicken back into the pot of rice
  • Place in the oven uncovered for 35 minutes or until the liquid has fully dissolved in the the chicken and rice
  • Remove from the oven and enjoy!
