The Best Stuffed Bell Peppers In The South

Stuffed bell peppers are a meal that packs a powerful, flavorful, and notorious bunch. What I love about these southern stuffed bell peppers is the combination of freshly cooked vegetables, flavorful ground turkey, and gooey melted cheese that makes us all want to come running for a bite.

Ingredients  

  • 5 to 6 Bell Peppers Any color
  • 1 Pound Ground Turkey
  • 1 Tablespoon Olive Oil
  • 1 Cup Brown Rice Precooked
  • 1 1/2 Cups Mozzarella Cheese
  • Salt To Taste
  • Pepper To Taste
  • Garlic Powder To Taste
  • Season Salt To Taste
  • Italian Seasoning To Taste
  • 1/2 Shallots or Onion Chopped
  • 1 Cup Mushrooms Chopped
  • 1 Spinach Chopped
  • 1 Can Diced Tomatoes 14.05oz
  • Parsley For garnish

Instructions

  • Chop bell pepper in half. Remove the seeds. Place into an oven-safe dish.
    5 to 6 Bell Peppers
  • To a pot on medium-low, add olive oil. Once hot, add your ground turkey meat, chopped spinach, shallots, and mushrooms. Allow cooking until browned.
    1 Pound Ground Turkey, 1 Tablespoon Olive Oil, 1 Cup Mushrooms, 1 Spinach, 1/2 Shallots or Onion
  • Next, add your pre-cooked brown rice and diced tomatoes. Season to taste. Stir well.
    1 Cup Brown Rice, Salt, Pepper, Garlic Powder, Season Salt, 1 Can Diced Tomatoes, Italian Seasoning
  • Turn stove to medium-low and allow to simmer for 8 to 10 minutes or until rice is done.
  • Remove from the stove. Fill the peppers with rice mixture.
  • Sprinkle cheese over the top and bake in a preheated oven of 375 degrees for 5 to 10 minutes. Use whatever cheese you would like to use. Garnish with parsley
