Chop bell pepper in half. Remove the seeds. Place into an oven-safe dish.

To a pot on medium-low, add olive oil. Once hot, add your ground turkey meat, chopped spinach, shallots, and mushrooms. Allow cooking until browned.

Next, add your pre-cooked brown rice and diced tomatoes. Season to taste. Stir well.

Turn stove to medium-low and allow to simmer for 8 to 10 minutes or until rice is done.
Remove from the stove. Fill the peppers with rice mixture.
Sprinkle cheese over the top and bake in a preheated oven of 375 degrees for 5 to 10 minutes. Use whatever cheese you would like to use. Garnish with parsley
