Sweet potato pancakes

Let’s start our morning off with these mouth-watering sweet potato pancakes. They are just the right amount of cinnamon that will leave your house smelling heavenly. They are so rich in flavor and surprisingly simple to make.

Ingredients  

  • 2 sweet potatoe baked or boiled
  • 2 eggs
  • 1/4 cup granulated sugar optional
  • 2 tsp cinnamon
  • 1 tsp Pure vanilla extract
  • 1 cup self rising flour
  • 1 tbsp buttermilk
  • nonstick spray

Instructions

  • Bake your sweet potatoes are you can boil them. Once the sweet potatoes become soft enough for a fork to go through take them out.
  • In a bowl mash, the sweet potatoes or you can place them in a food processor.
  • Add in your eggs, pure vanilla extract, baking powder, cinnamon, self-rising flour, and sugar then begin to wisp all the ingredients together.
  • Add in your buttermilk and wisp
  • Once you have a somewhat watery consistency spray your pan with the next nonstick spray and turn your stove on med-high.
  • Cook on one side until golden brown and then repeat on the next side.

Notes

If you are trying to keep it a little more on the healthier side you can definitely choose to use almond flour or whole wheat flour. You can also skip out on the sugar that’s in this recipe
