Ingredients  

  • 3 lbs Stew Beef
  • 3 Tbsp Olive Oil
  • 3 Garlic Cloves Minced
  • Black Pepper To taste
  • Salt To taste
  • 1 Bay Leaf
  • 2 Thyme Sprigs
  • 1 Onion Chopped
  • 1 Tbsp All Purpose Flour or Cornstarch
  • 3 Carrots Cut into bite size pieces
  • 2 Russet Potatoes or Yukon(Peeled and cut into bite size pieces
  • 2 Tbsp Tomato Paste
  • 2 Cups Beef Broth Low Sodium
  • 1 Cup Red Wine
  • Fresh Parsley Garnish/optional

Instructions

  • Preheat your cast iron Dutch pan to medium-high.
  • Cut your beef into bite-sized pieces and place it in a bowl.
    3 lbs Stew Beef
  • To your pot add your olive oil. Once your olive oil begins to sizzle add in your beef, making sure not to overcrowd the pot with the meat. Generously season your meat. Salt & pepper to taste or whatever kind of seasonings you prefer.
    3 Tbsp Olive Oil, Salt, Black Pepper
  • Brown all sides of your stew beef and remove it from the pot. Repeat these steps for any remaining beef. Add extra olive oil if needed.
  • Remove your beef from the pot and set it to the side.
  • Add in your onions, garlic, and carrots then allow to cook until they begin to soften. Stirring occasionally.
    1 Onion, 3 Carrots, 3 Garlic Cloves
  • Add in your flour and stir for 2 minutes or until flour is dissolved.
    1 Tbsp All Purpose Flour or Cornstarch
  • Next, add in your red wine and tomato paste and stir until combined.
    1 Cup Red Wine, 2 Tbsp Tomato Paste
  • Add in your beef broth and stir.
    2 Cups Beef Broth
  • Place your stew beef & potatoes into the pot. Then season to taste and add in your bay leaf and thyme.
    1 Bay Leaf, 2 Thyme Sprigs, 2 Russet Potatoes or Yukon(Peeled and cut into bite size pieces, Fresh Parsley
  • Place a lid over your pot and cook on medium-low for 2 1/2 hours.
