In separate bowls add flour, eggs (whisked), and panko crumbs. Mix Cajun seasoning, garlic powder, and salt and pepper into the flour bowl. Dredge shrimp in flour seasoning, then eggs, and last roll in panko bread crumbs.

In a large bowl mix together plain mayonnaise, pickle relish, horseradish minced garlic, a splash of lemon juice, and paprika.

Assemble the po' boys by spreading remoulade sauce over the bread, next layer shredded lettuce, sliced tomatoes, pickles, and the crispy fried shrimp on the bread rolls.
