In a large skillet, heat a drizzle of olive oil over medium heat. Add the Italian chicken sausages and cook them until they're nicely browned on all sides. Remove the sausages from the skillet and set them aside.

Pour in enough beef broth to cover the sausages and vegetables partially. Season with salt and pepper to taste.

Once the sausages are cooked through and the peppers are tender, remove the skillet from the heat. Sprinkle some freshly chopped parsley over the top for a vibrant finishing touch.
