Broccoli salad with cranberries and bacon is not only a delicious and nutritious keto-friendly dish. It’s also a combination of fresh broccoli and dried cranberries. Oh, and let’s not forget the smokiness of crispy bacon! Here in the South, we love ourselves some broccoli salad.

Ingredients  

  • 4 Cups Broccoli florets cut into bite-sized pieces
  • 1 Cup Cranberries
  • 4 Slices Bacon cooked and crumbled
  • 1/4 Cup Red onion diced
  • 1/4 Cup Sunflower seeds optional
  • 1/2 Cup Mayonnaise
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Tablespoon Honey
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the broccoli florets, cranberries, crumbled bacon, red onion, and sunflower seeds (if using).
    4 Cups Broccoli florets, 1 Cup Cranberries, 4 Slices Bacon, 1/4 Cup Red onion, 1/4 Cup Sunflower seeds
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until well combined.
    1/2 Cup Mayonnaise, 2 Tablespoons Apple Cider Vinegar, 1 Tablespoon Honey, Salt and pepper to taste
  • Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
  • Serve chilled and enjoy!
