Creamy Beef Taco Soup

Ingredients  

  • 1 lb ground beef
  • 1 Onion Diced
  • 1 Tablespoons Minced Garlic
  • 1 Can Tomato Sauce 15 oz
  • 1 Can Black beans drained and rinsed
  • 1 Can Corn drained
  • 1 Packet Taco seasoning
  • 1/2 Teaspoon Cajun Seasoning
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper to taste
  • 1 Tablespoon Garlic Powder
  • 1 Box Beef broth
  • 1/2 Cup Heavy Cream
  • 1 Tablespoon Ground Cumin
  • Toppings shredded cheese,sour cream, chopped fresh cilantro, diced avocado, tortilla strips (optional)

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess grease.

  • Add the diced onion and minced garlic to the pot and cook until the onions are translucent.

  • Stir in the diced tomatoes, black beans, corn, and taco seasoning. Cook for about 5 minutes to allow the flavors to meld together.
    1 Can Tomato Sauce, 1 Can Black beans, 1 Can Corn, 1 Packet Taco seasoning
  • Pour in the beef broth and bring the soup to a simmer. Let it cook for about 15 minutes.
    1 Box Beef broth
  • Reduce the heat to low and stir in the heavy cream. Simmer for an additional 5 minutes, until the soup is heated through.
    1/2 Cup Heavy Cream
  • Season to taste.
    1 Teaspoon Salt, 1 Teaspoon Black Pepper, 1 Tablespoon Ground Cumin, 1 Tablespoon Garlic Powder
  • Serve the creamy beef taco soup hot, garnished with shredded cheese, sour cream, chopped fresh cilantro, diced avocado, and tortilla strips if desired.
