 Hamburger Corn Casserole Recipe

I love making this hearty weeknight dinner recipe for my family when I don’t have much time to put in over the stove. It’s packed with protein and overloaded with flavor. You should definitely have this easy jiffy corn casserole on your table for those busy weeknights.

Ingredients  

  • 1 Pound Ground beef
  • 1/2 Small Onion Diced
  • 1/2 Bell pepper Diced (optional)
  • 1 Can Corn kernels  (15 ounces)Drained
  • 1/2 Cup Shredded cheese
  • 1 Teaspoon Garlic powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Italian Seasoning
  • 1/2 Teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 Box Jiffy Corn Muffin Mix
  • 1 Large Egg
  • 1/2 Cup Milk
  • 1 Teaspoon Honey
  • Optional toppings: chopped green onions, diced tomatoes

Instructions

  • Preheat your oven to 400°F.
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease if necessary.

  • Add the diced onions and bell peppers to the skillet and cook for a few minutes until they become tender.
    1/2 Small Onion, 1/2 Bell pepper
  • To the same skillet stir in the corn kernels, chili powder, thyme, Italian seasoning, garlic powder, salt, shredded cheese, and black pepper. Mix everything well and let it simmer for about 5 minutes to allow the flavors to blend.
    1 Can Corn kernels, 1/2 Cup Shredded cheese, 1 Teaspoon Garlic powder, 1 Teaspoon Thyme, 1/2 Teaspoon Chili Powder, 1/2 teaspoon Salt, 1/4 teaspoon Black pepper, 1 Teaspoon Italian Seasoning
  • In a separate bowl, prepare the Jiffy corn muffin mix by combining the mix, egg, and milk according to the package instructions. Lastly, add in shredded cheese. Stir until well blended.
    1 Box Jiffy Corn Muffin Mix, 1 Large Egg, 1/2 Cup Milk, 1/2 Cup Shredded cheese
  • Transfer the meat to a greased 9x13 inch baking dish.
  • Pour the Jiffy corn muffin mixture over the meat and corn mixture in the baking dish, spreading it evenly.
  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly, and the cornbread topping is golden brown.
  • Once cooked, remove the casserole from the oven and lather some honey over the top. Let it cool for a few minutes.

  • You can sprinkle some chopped green onions or diced tomatoes on top for added freshness and color, if desired.
