Simple ingredients that you can find in your pantry and chest freezer are a plus right? So, that’s what I’m aiming for with this hamburger corn casserole.

  • Ground Beef- I used 85 percent lean and 15 percent fat beef. This will help to lock in all of the flavors in this cheeseburger casserole recipe.
  • Whole Kernel Corn- You can use 1 to 2 cans of corn depending on how big of a casserole dish you have to create this corn casserole recipe.
  • Seasonings- One thing I love about my recipe is that the herbs are kept simple. Chili Powder, garlic powder, onion powder, and more.
  • Cheddar Cheese-  Try and stick with sharp cheddar cheese. You can also ditch the prepackaged stuff and go for a block of age cheddar cheese to make this hearty meal.
  • Bell Peppers- I used green bell peppers and chopped onions.
  • Jiffy Mix- Yep you heard me, straight from the inexpensive jiffy box. Don’t judge me. You know the rest. 🤣 No extra ingredients needed. If you want homemade cornbread click here.

How To Make Hamburger Corn Casserole?

  • To a medium-high large skillet add butter. Next, add your ground beef and begin seasoning your beef.
  • Once the beef has browned, drain and add back to medium-low skillet.
  • Add in your chopped minced garlic, onions, bell peppers, cheddar cheese, and diced tomatoes. Allow this beef cornbread casserole to simmer for 10 minutes stirring occasionally.
  • While waiting mix your cornbread mixture according to the instructions on the back of the box.
  • To a casserole dish add your cornbread batter to the ground beef mixture.
  • Next, pour your jiffy corn muffin mix over the top of the ground beef mixture. Smooth out the cornbread layer well.
  • Add to a preheated oven of 400 for 15 to 25 minutes until the top of the sweet cornbread becomes golden brown.
  • Lastly, glaze the top of the cornbread with honey.

Variations

  • Ground chicken can be replaced with ground beef. You can also use turkey meat.
  • Want more texture add in some simple black beans.

Ingredients 

  • 1 Pound Ground beef
  • 1/2 Small Onion Diced
  • 1/2 Bell pepper Diced (optional)
  • 1 Can Corn kernels  (15 ounces)Drained
  • 1/2 Cup Shredded cheese
  • 1 Teaspoon Garlic powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Italian Seasoning
  • 1/2 Teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 Box Jiffy Corn Muffin Mix
  • 1 Large Egg
  • 1/2 Cup Milk
  • 1 Teaspoon Honey
  • Optional toppings: chopped green onions, diced tomatoes

Instructions

  • Preheat your oven to 400°F.
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease if necessary.
    1 Pound Ground beef
  • Add the diced onions and bell peppers to the skillet and cook for a few minutes until they become tender.
    1/2 Small Onion, 1/2 Bell pepper
  • To the same skillet stir in the corn kernels, chili powder, thyme, Italian seasoning, garlic powder, salt, shredded cheese, and black pepper. Mix everything well and let it simmer for about 5 minutes to allow the flavors to blend.
    1 Can Corn kernels, 1/2 Cup Shredded cheese, 1 Teaspoon Garlic powder, 1 Teaspoon Thyme, 1/2 Teaspoon Chili Powder, 1/2 teaspoon Salt, 1/4 teaspoon Black pepper, 1 Teaspoon Italian Seasoning
  • In a separate bowl, prepare the Jiffy corn muffin mix by combining the mix, egg, and milk according to the package instructions. Lastly, add in shredded cheese. Stir until well blended.
    1 Box Jiffy Corn Muffin Mix, 1 Large Egg, 1/2 Cup Milk, 1/2 Cup Shredded cheese
  • Transfer the meat to a greased 9×13 inch baking dish.
  • Pour the Jiffy corn muffin mixture over the meat and corn mixture in the baking dish, spreading it evenly.
  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly, and the cornbread topping is golden brown.
  • Once cooked, remove the casserole from the oven and lather some honey over the top. Let it cool for a few minutes.
