5-6 Bell Peppers- Red, yellow, or orange bell peppers also work in this recipe.

Ground Turkey Meat- I used this choice of meat as a healthier alternative. You can always use ground beef or even ground chicken.

Olive Oil- Extra virgin to sear the ground turkey and help lock in the flavors.

Brown Rice– You can use white rice if that’s your preference. I used brown rice because it’s packed with nutrition.

Salt and pepper- Bring a ton of flavor to these southern stuffed bell peppers.

Garlic Powder- To add a tremendous amount of flavor.

Italian Seasoning- To give that balance of sweet and savory.

Dice Tomatoes- To help compliment the ingredients in this recipe.

Mozzarella Cheese- Gives these stuffed bell peppers a lot more texture.

Shallots- I used shallots in this recipe, but you can also use onions.

How To Make These Stuffed Peppers

Chop and Prepare- Chop bell pepper in half. Remove the seeds. Place into an oven-safe dish.

Brown Meat- To a pot on medium-low, add olive oil. Once hot, add your ground turkey meat, chopped spinach, shallots, and mushrooms. Allow cooking until browned.

Cook Rice- Next, add your cooked brown rice and diced tomatoes. Season to taste. Stir well.

Turn stove to medium-low and allow to simmer for 8 to 10 minutes or until rice is done.

Fill Peppers- Remove from the stove. Fill the peppers with rice. 

Into the Oven- Sprinkle cheese over the top and bake in a preheated oven of 375 degrees for 5 to 10 minutes. Use whatever cheese you would like to use.

  • 1 Pound Ground Turkey

  • 1 Cup Brown Rice Precooked
  • 1 1/2 Cups Mozzarella Cheese
  • Salt To Taste
  • Pepper To Taste
  • Garlic Powder To Taste
  • Season Salt To Taste

  • 1/2 Shallots or Onion Chopped
  • 1 Cup Mushrooms Chopped
  • 1 Spinach Chopped
  • 1 Can Diced Tomatoes 14.05oz
