This recipe is perfect for those wanting to get rid of those bagged potatoes you may have brought weeks ago and didn’t touch. Don’t worry my friend I’ve got you covered! This recipe is the perfect blend of comfort and crunch! My mom made this recipe faithfully growing up. I remember me my dad racing to the stove for seconds!! He always won by the way.🤣

Ingredients Needed

  • Red Potatoes- These are ideal for roasting. The flavor is mild with a slight sweetness!
  • Parmesan Cheese- It complements the dish with it savory sharp and rich taste.
  • Olive Oil- This will help the seasonings to  stick to the recipe well.
  • Bacon- A step that is completely optional but is highly recommended!
  • Butter- I mean come on y’all. Need I say anything but FLAVOR!
  • Seasonings- I added a little bit of basil, salt, pepper, and some garlic powder.

How To Make Baked Parmesan Red Potatoes?

1.   Wash and dry your baked Parmesan red potatoes.

2.   Leave the skin on the potatoes and begin slicing them into round 1 inch slices.

3.   Next, thinly slice your onions.

4.   To a bowl add onion, potatoes, olive oil, and seasonings. Mix well.

5.   To a medium- high skillet add butter and allow to, add potatoes and onions. Allow to sear until the onions are softened.

6.   Remove your cast iron skillet from the stove. Add your Parmesan cheese.

7.   Add to a preheated oven of 400 degrees and allow to cook for 18 minutes.

8.   Lastly, top with sour cream, cooked bacon and enjoy!!

Ingredients  

  • 4 Red Potatoes skin on
  • 1/2 Onion thinly sliced
  • 2 Tbsp Olive Oil
  • 1 Tsp Salt
  • 1 Tsp Basil
  • 1 Tsp Black Pepper
  • 1 tsp Garlic Powder
  • 2 Tbsp Butter
  • 1 to 2 Cups Grated Parmesan Cheese
  • Sour cream for topping
  • Cooked bacon for topping

Instructions

  • Preheat the oven to 400 degrees.
  • Wash and dry the red potatoes, then slice them into 1-inch rounds.

  • In a bowl, toss the potatoes, onions, olive oil, along with seasonings.o

  • Heat a medium-high skillet and melt the butter. Add the potatoes and onions, cooking until the onions soften.

  • Remove the skillet from the heat, sprinkle Parmesan cheese over the potentially .
    1 to 2 Cups Grated Parmesan Cheese
  • Transfer the skillet to the oven and bake for 18 minutes.
