Irresistible shrimp fried rice is one of those meals that seems like it’s difficult to make. I  bet you’re thinking  there is no way I can make this dish at home!  So, maybe that’s why you run to get takeout. Don’t worry I’m guilty of this too. However, COVID-19 has changed this for a lot of us. As a result, I’ve been flexing my cooking skills and whipping up some of my favorite takeout meals. So let’s jump right into this quick and easy at home recipe! Let’s call this one COVID-19 Blues but you definitely won’t be blue after you taste this!

Substitutions

First, let’s start off by saying if you don’t like shrimp, just substitute shrimp for any meat of your choice! You can add pork, beef, or chicken. Either way, this meal will be delicious.

Shrimp Fried rice easy

Step 1: Cook any rice of your choice. Once the rice is finished, sit rice in the refrigerator to cool off for at least 30 minutes. In doing this, it helps your rice not to become overcooked and mushy when you stir it in the rest of the ingredients.

Step 2:

Scramble 2 eggs. If you like a ton of eggs you can always add more. Once eggs are scrambled to your liking take them out and sit to the side.

Step 3:

Oil pan with vegetable oil. Then empty in the frozen sweet peas and carrots. Continue to stir around until cooked. It shouldn’t be long because they are already precooked.

Tip: Keep pan oiled so food won’t stick. Not a ton of oil just enough to cover bottom of pan.

Step 4:

Add in X-large 2-pound bag of shrimp. Let shrimp cook until opaque.

Step 5:

Add in cool rice along with all the ingredients you cooked before; carrots, sweet peas, eggs, and shrimp.

Step 6: Before stirring food together, add sesame oil, soy sauce, salt, eggs,black pepper, chopped and green onions.

Step 7: Let cook until rice turns light brown.

Step 8: Let’s eat!

Ingredients 

  • 2 Tbsp Vegetable oil Make sure the pan stays greased
  • 1 Tsp Sesame oil
  • 2 Eggs Use as many eggs as you would like I personally used 2
  • 1/2 Cup Frozen Carrots and peas
  • 1/3 Cup Chopped green onions
  • 2 Pound X-large 2-pound bag EZ-peel, deveined tail-on
  • 1/2 Tsp Salt
  • 1/2 Tsp Black pepper
  • 1 Tbsp Soy Sauce
