I love to sit and eat some good old chili cheese potatoes. The gooey, shredded cheese on the potatoes and the savory beef chili are delicious. There is no need for beans for this one.
When I created this bowl of goodness, I was in awe of how the potatoes mixed with sweet chili tasted. This is a versatile, filling recipe you can add over a fresh salad or enjoy with a nice smoothie. The possibilities are endless, and you’ll be in hog heaven!
What Is Chili Cheese Potatoes?
They are a delicious dish combining cheddar cheese, chili, and potatoes. They can be compared to chili cheese fries, hassle-back potatoes, or a potato casserole dish. This dish is a combination comfort food classic.
Ingredients
- Purple onion brings in tremendous flavor to make these potatoes stand out to your tastebuds!
- Cheese: Use sharp shredded cheese. This will help complement the rich flavor of the ground beef and potatoes. The cheese melts everything together well.
- Potatoes—russet potatoes are a significant part of the recipe. You can use other types of potatoes. I will mention that more in the substitutions and variations below.
- Ground Beef- 80/20 beef is what I used in this recipe. You can use your preference for the ground beef fat ratio.
- Seasonings- Garlic powder, salt, black pepper, sugar, and chives. As always, the herbs can be modified to your liking.

How To Make chili cheese potatoes?
Add olive oil to a pot on medium-high heat. Once hot, add chopped onions. Sauté for 3 to 5 minutes.
Next, add your ground beef and cook until brown. Drain the grease and add it back to the pan. Add ketchup and sugar, and stir. Turn the stove to medium-low and simmer for 5 to 8 minutes. Remove from the stove.
To a casserole dish, add your chopped potatoes. Season and mix the potatoes around well.
Add your ground beef mixture, then top with bacon and shredded cheese.
Place in the oven for 45 minutes. Remove and enjoy!
Variations/Substitutions
Hasselback: Slice your potatoes hasselback style and bake them in a casserole dish with chili and melted cheese for a satisfying dinner.
Slow Cooker: Transfer potatoes to a slow cooker and top with chili and melted cheese. Cook on low for several hours for a delicious and easy meal.
4. Chili Cheese Dog Potatoes: Instead of traditional baked potatoes, use potato skins as a base and top them with chili, melted cheese, and sliced hot dogs for a fun recipe.
Storage For chili cheese potatoes
Any leftovers can be stored in an airtight container for later enjoyment. They are a great way to enjoy a satisfying dinner, whether watching a big game or simply craving a bowl of chili with a twist.

- 2 Cups Sharp Cheese
- 4 Medium Potatoes Chopped
- 3 to 4 Slices Bacon Cooked
- 1 LB Ground Beef Homemade Chili or Chili in can
- 1 1 Tablespoon Garlic Powder
- 1 Teaspoon 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1 Tablespoon Sugar
- 1 Teaspoons Chives Toppings
- 1 Cup Ketchup
Instructions
- Soak your potatoes in water for 30 minutes to an hour.4 Medium Potatoes
- Preheat your oven to 400 degrees.
