I have never really been a fan of chickpeas, but just recently, I discovered these little protein energy balls. I’ve since been eating them as a salad or even air-frying them for a crunchy snack. Either way, I love the texture of them and how they create a ton of texture and flavor for your meals. They are rich in plant-based protein, and the possibilities are endless, and I’m here for it all. Try this salad with grilled salmon, baked chicken, or even crispy cod

• Chickpeas- The thing I love about this ingredient. Is that it’s commonly found everywhere. So, no spending hours in the grocery store.

• Cucumbers—I like to look for crunchy, crispy, and firm cucumbers to make a good salad. 

• Tomatoes—Ah, now this is where the sweetness comes in. Try to go for the grape tomatoes. 

• Red Onion- I love the touch of boldness that it brings to the table. The onion brings out a sense of richness and flavor. 

• Olive oil—You don’t really need much for the dressing; just a simple dressing to mix into the chickpeas, cucumbers, and tomatoes. 

• Herbs—I love to add fresh cilantro and basil to complement the olive oil, along with salt and pepper. Talk about a flavor explosion. 

How To Make Chickpea Salad?

 Rinse and drain the chickpeas.

 Combine chickpeas, cucumber, tomatoes, and red onion in a large mixing bowl.

 Toss in the cilantro leaves and gently toss everything together.

 Stir the olive oil, lime juice, and seasoning in a small bowl. 

 You want to begin to pour dressing onto the salad.

 Next, you want to let the salad sit to help flavors blend.

 Once you have everything all mixed, you will want your seasonings to taste. 

 Serve nice and chill.

Variations

• If you like spicy food, this is where you will want to add a dash of red chili powder or even red pepper flakes. It’s your salad. Go crazy with things. 

• Feta cheese will be a perfect combination with this bowl of sweetness! 

• Try adding a side of garlic bread to take things to the next level.

Ingredients  

  • 2 Cups Chickpeas
  • 1/2 Cup Cucumber Diced and smashed
  • 1/2 Cup Tomatoes Diced
  • 1/2 Cup Red Onion Diced
  • 3 Tablespoons Cilantro leaves Diced
  • 1 Tablespoon Olive oil
  • Juice of half a Lime
  • Black pepper, Salt, Black salt (a hint), Chaat masala, and a dash of Red chili powder for seasoning

Instructions

  • Rinse and drain the chickpeas.
    2 Cups Chickpeas
  • In a large mixing bowl, combine the chickpeas, cucumber, tomatoes, and red onion.
    1/2 Cup Cucumber, 1/2 Cup Tomatoes, 1/2 Cup Red Onion
  • Add the cilantro leaves and gently toss everything together.
    3 Tablespoons Cilantro leaves
  • In a small bowl, whisk together the olive oil, lime juice, and the seasoning ingredients.
    1 Tablespoon Olive oil, Juice of half a Lime
  • Pour the dressing over the salad and toss well to coat all the ingredients.
  • Let the salad sit for a few minutes to allow the flavors to meld together.
  • Taste and adjust the seasoning if needed.
    Black pepper, Salt, Black salt (a hint), Chaat masala, and a dash of Red chili powder for seasoning
  • Serve the chickpea salad as a side dish or a light meal.
