I was baffled when I first heard the term chicken lollipop, but it grew on me rather quickly. So, lollipop chicken legs are chicken drumsticks that you either use a knife or shears. You then push the meat's skin towards the thicker part. You want to make sure you discard the remainder of the chicken. This would be any excessive meat left around the legs or any skin hanging off. Once you have accomplished that, you are ready to go.
