My husband and I love this recipe because it’s perfect for any time of year and pairs perfectly with a big bowl of garlic mashed potatoes! It’s yummy in my tummy. I bet you all can smell this goodness through the phone. Lol. Let’s not forget the quick and easy BBQ sauce and the pre-cooked crispy bacon and cheese. All I can say is wow. I love to eat some good ole meatloaf with just the right amount of sauce on the outside and meaty goodness on the inside.

  • Ground beef- Go for 80/20. It renders more flavor, texture, and moisture. 90/10 can be another great option.
  • Breadcrumbs- Absorbs all of the delicious juices to help keep this bacon and cheese meatloaf nice and tender!
  • Milk- Tenderizer
  • Shredded cheddar cheese-  Go for sharp cheese; this will enrich the taste.
  • Garlic- I used fresh, but you can use minced if that’s what you have.  
  • Onion- Sweet and chopped is just fine.
  • Eggs act somewhat as a binding.
  • Bacon- thick precooked

How To Make Bacon and Cheese Meatloaf?

  • Gather all of the ingredients listed below.
  • In a bowl, combine all of the necessary ingredients.
  • Place your meatloaf into a baking dish and begin shaping.
  • Once done, transfer to a preheated oven at 400 degrees for 1 hour.
  • At the 45-minute mark, add your first coat of BBQ sauce. Place back in the oven.
  • Repeat one more time, 5 minutes before the hour is up.
  • Let rest for 5 minutes, and enjoy cheesy meatloaf with my Parmesan mashed potatoes and broccolini.

  • 1 lb Ground beef
  • Your Favorite BBQ Sauce 1 Tablespoon for mixture and remainder for meatloaf topping
  • 1 Cup Breadcrumbs
  • 1/2 Cup Milk
  • 1/2 Block Sharp Cheddar cheese Chopped into bitesized
  • 1/2 Onion
  • 1 Tablespoon Garlic Chopped
  • 2 Eggs
  • 4 Slabs Bacon Cooked
  • Salt To taste
  • Pepper To taste
  • Garlic Powder To taste

  • To a bowl combine all of the necessary ingredients.
