Who doesn’t love to eat a delicious meal and not be self-conscious about your health?!? I know I do. That’s why I created this tasty mango grilled chicken salad.
Salads are a good choice!!
If you are looking to be more health-conscious, I say salads are the way to go. Don’t get me wrong, I love my shrimp and lobster or my Oreo banana smoothie but I also like to know that I am also balancing my diet with healthy goodness. Hence my love for making salads! They are nutritious and good at replacing high-calorie meals.
Kale on a salad
I often used lettuce on my salads, but not any more folks. The day my sister introduced me to a kale salad is the day I never looked back. Packed with calcium, potassium, and vitamin K, kale is my go-to for salads.
Are mango salads healthy for you?
Salads with fruit are a good way to get in those vitamins and minerals. They are easily a meal replacement for those not so healthy meals. Replacing your high-calorie meals with salad is a good way to trim down some weight but you must remember not to add a lot of unhealthy ingredients on your salad.
Ingredients on mango grilled chicken salad
The ingredients for the salad are chicken, kale, mango, cucumber, grape tomatoes, onions, pecans, feta cheese, and shredded carrots. Obviously, I tried to stay away from meat like bacon on this salad. I focused on all the things I felt were healthy because sometimes, I make the mistake of adding too many ingredients on my salad. So, take my advice, keep it simple and stick to the healthy stuff.
Making the salad
Of course, we all know how simple making a salad is but for the heck of it, I will state the obvious. LOL. I seasoned my chicken with salt, pepper, and garlic powder. I grilled one pack of chicken breasts on my electric griddle. Then I boiled 2 eggs. After that, I placed my washed and dried kale on my plate and added all my prepped ingredients together (mango, cucumber, grape tomatoes, onions, pecans, feta cheese, and shredded carrots).
Note: If you don’t like mangos then you can substitute the mangos with a green apple, it’s just as delicious! You will ultimately have an apple pecan salad like Wendy’s.

Mango grilled chicken salad
Ingredients
- 1 Pound Cooked chicken breast
- 4 Cup Kale
- 1 Mango peeled and sliced
- 3 Cups Cherry Tomatoes To your liking
- 1 Cup Whole Pecans Chopped if you like
- 1/2 Red Onion Diced
- 1 Cucumer Peeled and chopped
- 1 Cup Feta Cheese To your liking
- 1/2 Lime squeezed Optional
- 1/2 Cup Shredded Carrots
- 1/4 Tsp Salt To your liking
- 2 Boil egss
Red Wine Vinaigrette
- 1/2 Cup Olive Oil
- 4 Tbsp Red wine Vinegar
- 2 Tsp Dijon Mustard
- 1 Tsp Dried Oregeno
- 1/4 Cup Minced Garlic
Instructions
