A pot roast is when you purchase a cut of beef. Once you purchase the beef, season and sear the meat on both sides, making sure the meat is brown before transferring it to either your slow cooker or instant pot. I placed my keto Mississippi pot roast in an instant pot. The instant pot took about 1 hour to steam, but a pot roast can take well over 5 hours when cooked in a slow cooker. I have made my pot roast in a slow cooker. Let me tell you, both the instant pot and the slow cooker came out amazing!
Yes, Mississippi pot roast is keto friendly and shouldn’t throw you out of ketosis when consumed in moderation. This recipe is high in protein but not so high in carbohydrates. It’s nothing wrong with carbohydrates. It’s just better for us to stay away from the simple carbs. Things like soda, burgers, fries, chips, and any junk food you can name.
These types of food spike your sugar levels. The simple carbs boost energy, and you crash and become hungry more quickly. You also have no more energy, but complex carbs do the opposite. They take longer to break down in return, leaving you less hungry.
I know you are used to seeing people put their pot roast in a Dutch oven or a slow cooker, but what if I told you that you could cut that cooking time in more than half by first searing your meat on both sides, stovetop? Once you do that, you will place the roast into the instant pot. After that, you want to add the remaining ingredients into the pot. Turn the timer to 1 hour and let the magic happen!! So, to answer your question. Yes, you can cook a Mississippi pot roast in an instant pot.
Tips: if you have never used an instant pot before, please follow a structured YouTube video so that no accidents will happen. Instant pots can be very dangerous when not operated correctly.
Instant pot Mississippi pot roast must be one of my favorite meals because it’s a no-mess hassle, and the steps in this recipe are simple. If you blank your fast, you just might miss something. So, here we go. Firstly, you want to season your meat on both sides once you have done this, place your meat flat into a preheated cast iron, buttered pan. Once you have placed the roast beef into the cast iron pan, allow it to cook until the cast iron pan releases the meat. Now, continue to the other side. Now that you are done with all your searing. Place your roast into your instant pot along with the rest of the ingredients. Add the top on, set the timer, and enjoy a juicy instant pot roast.
I serve this instant pot Mississippi roast with a ton of different sides. It just depends on what you want to eat that day. My favorite side with this instant pot meal is my roasted broccoli which is very keto and low-carb friendly. You can’t go wrong with this meal. You are going to be getting in your share of protein.
You will need to get an airtight storage container. Place all your leftover roast beef into the container. You can store this roast beef in the refrigerator for up to 4 days. If you freeze the leftover roast, it can last in the freezer for up to 2 months or more.
To reheat this recipe in a microwave, just add the beef to a microwave-safe pan. Once you have done so, add the meat to the microwave for one minute and 30 seconds. After that, your food should be good and warm. You can also use the oven. If you have any left-over juice add that to the beef as well. Next, add the aluminum foil over the top of the oven-safe pan. Place the meat in a preheated oven of 325 degrees for 25 minutes or until the roast is warm.
